New restaurant puts down Roots in Longmont

Grand opening of Roots Restaurant’s new location was celebrated Thursday at Dickens Opera House.

Roots celebrated its grand opening at Dickens Opera House on Thursday.

Owners Vipul and Madhoo Seth cut the ribbon for the Longmont Chamber event, followed by a tour inside the historic building. The new restaurant  at 300 Main Street had its soft opening several weeks ago.

Roots began in 2002 as a full-service catering company, The Gourmet Kitchen, offering multicultural cuisine to its clients. They expanded to a venue in Broomfield and opened a restaurant in 2020 amid the pandemic.

When the opportunity came to relocate to the Dickens Opera House, the Seths said they were captivated by its heritage and character.

“We didn’t choose Longmont,” Madhoo Seth said. “It chose us.”

As immigrants from New Delhi, the owners said that food is one of the best mediums to connect people to culture and each other. Madhoo Seth is an executive chef who is passionate about every dish, bringing fresh spices and recipes from her international travels.

Most recently that was Spain, which inspired authentic Spanish gnocchi featuring pappardelle sweet potato gnocchi cooked in a house-made romesco sauce with tomatoes and kale.

Supporting and partnering with local farms for fresh produce is a key value to the Seths as well.

The Dickens Opera House is a historic building in Longmont, which the Seth family said they are committed to preserving.

Roots is currently open daily except Tuesday. Hours are 3-5 p.m. for happy hour, 5-9 p.m. for dinner and brunch from 10 a.m.-2:30 p.m. on Saturdays and Sundays.
